Monika is responsible for selecting ingredients, creating recipes and overseeing the day-to-day operation of the kitchen. Her approach is based on a simple and solid philosophy: to cook with fresh ingredients, with respect for the possibilities of the kitchen, but without compromising on flavour. Old Czech recipes form the foundation, and the team gives them a more contemporary interpretation – lighter, more imaginative, yet still true to their roots.
Inspiration comes from the local landscape. You will not find seafood here – instead, the plates feature beef from sister farms, game from local preserves and honest dairy products, such as yoghurt in glass jars from the Agrola dairy.
The menu changes with the seasons and offers the very best each time of year brings.
Desserts deserve a special chapter of their own. If there is one flavour you should take away with you, it should be the sweet yeast fruit dumplings – Monika’s speciality, clearly showing both her feel for dough and her joy in cooking.
When she is not focusing on sweets, Monika also applies her passion for yeast dough to homemade savoury baked goods: sourdough bread and rolls are among the stars of breakfast at this resort.
